Fructosyl Amine Acid Oxidase (FAOD, EC1.5.3.X) belongs to redox enzymes, which can catalyze the oxidation and decomposition of fructose amino acids, producing hydrogen peroxide, glucuronide ketone and corresponding amino acids with fructose amino acids as substrates. FAOD is a D-amino acid oxidase family with FAD as coenzyme. Its FAD domain consists of four alpha helix and two beta folds. Its catalytic activity is substrate-specific.
Glucosylated hemoglobin (HbA1C) glucose is formed by specifically modifying hemoglobin with valine residues at the N-terminal of the hemoglobin beta-chain. HbA1C can reflect the average blood sugar level of human body in the past three months, and is not affected by the fluctuation of blood sugar concentration.
